Mini Party Tarts

Goat Cheese and Olive Tarts

5 Tbsp. softened goat cheese                    2.5 Tbsp olive tapenade

1 tsp. fresh thyme leaves                          Fresh ground pepper

1 (1.9oz) package frozen mini-phyllo pastry shells

Preheat oven to 375.  Place 1 tsp. softened goat cheese into each of the 15 FROZEN pastry shells.  Top each with 1/2 tsp. olive tapenade.  Place on baking sheet and bake 6 minutes.  Sprinkle with fresh thyme leaves and freshly ground black pepper to taste.

Feta and Artichoke Tarts

2 large eggs                                                  1/2 Cup crumbled Feta

1 jar (6.5oz) marinated artichoke hearts, drained and chopped

1 (1.9oz) package frozen mini-phyllo pastry shells

Preheat oven to 350.  Place FROZEN shells on ungreased baking sheet.  Place eggs, cheese and artichoke hearts in mixing bowl.  Mix well to blend.  Spoon egg mixture into shells. Place in oven and bake, uncovered, for 20 minutes.
