Santa’s Sausage Gravy Casserole

1 (12 oz) can buttermilk biscuits

8 eggs

1 (2.75 oz) pkg of Pioneer Peppered white gravy mix

1 lb ground sausage (green onion or spicy or regular)

1/2 C milk

Salt and pepper to taste

3/4 C shredded cheddar cheese

 

                 Preheat oven to 350. 

                 Cut biscuit dough into quarters.  Line greased baking dish with biscuit quarters. 

                 In a large skillet, brown the sausage until cooked through and crumble into smaller pieces with spoon or spatula. 

                 Spread sausage over biscuit pieces.

                 In a bowl, whisk together eggs, milk, salt and pepper. Pour over sausage and biscuit mixture. 

                 Prepare gravy according to package directions, then pour over ingredients.  Refrigerate over night.

Bring to room temperature.  Top with shredded cheese and bake at 350 for 30-45 minutes until fully cooked.

Prepare this Christmas Eve for Christmas Day while you open the presents.  A great way to start the day with a hearty Santa breakfast — and with no work!

Taco Soup

2lbs. ground meat (turkey works too)

1 can ranch style beans

1 can navy beans

1 can Rotel

1 can diced tomatoes

1 can corn

1 can cream corn

1 package taco seasoning

Brown meat & drain. Fire up the can opener. Than add all the other ingredients. Cook about 30 minutes. Serve with grated cheddar cheese, sour cream and Mexican croutons, i.e. Tostitos!
