“Dated” Sweet Potatoes

1/2 C evaporated milk

3 C mashed sweet potatoes

1 8 oz pkg. Diced or whole dates, cut up

1 egg

3 T butter

Topping: 1/2 C maple syrup & 1/4 C butter

Add milk & egg to mashed sweet potatoes. Beat well, until smooth paste is formed. Melt butter in pan, add dates and sauté for 2 minutes, stirring constantly. Add sweet potatoes and blend. Place in large casserole dish. Heat maple syrup & 1/4 C butter until butter is melted. Pour over top of casserole. Bake at 400 degrees approximately 40 minutes. Serve topped with sour cream & garnished with whole pitted dates.. So easy & so good!!!
