Mandarina Salad

2 tsp finely chopped onion               1/2 C cider vinegar

1/4 C sugar                                          1/4 C olive oil

1 tsp ground dry mustard                 1 pkg baby spinach

1 head red tip lettuce, torn               1/3 C shredded carrots

2 cans (11 oz) mandarin oranges, drained

4 slices center cut bacon, crisply fried and crumbled

1/2 C chopped red onion

 

Whisk together onion, vinegar, sugar, olive oil and

mustard.  Refrigerate until ready to toss the salad.

 

In a large salad bowl, combine the lettuce,

spinach, red onion, oranges, carrots, and bacon.

Toss with dressing when ready to serve.  Serves 8-10.
