Cajun Shrimp Casserole

2 lbs. large unpeeled shrimp                 1/4 C butter

1 bag seasoning blend                            2 C sliced okra (frozen OK)

1 T lemon juice                                        1-1/2 tsp. salt

1 Can Cream of Shrimp Soup               1 T soy sauce

1/2 tsp. cayenne pepper                        3 C cooked long grain rice

1/4 C grated parmesan cheese             Garnish: lemon/parsley

 

Peel shrimp. Melt 1/4C butter in skillet; add seasoning blend & sauté til tender. Add garlic, okra, lemon juice,& salt. Sauté 5 minutes. Add shrimp & cook 3 minutes or ‘til shrimp turn pink. Stir in soup & soy, rice & cayenne until blended.  Pour into lightly greased 11×7 baking dish. Sprinkle with parmesan. Bake at 350 for 15-20 minutes until bubbly.  Serves 6. May be prepared a day ahead or frozen. Enjoy!
