Honey Chicken Salad

4 C chopped, cooked chicken              3 celery ribs, diced (1.5 cups)

1 C sweetened dried cranberries        1/2 C chopped pecans, toasted

1.5 C mayonnaise                                    1/3 C honey

1/4 tsp. salt                                               1/4 tsp. pepper

Combine chicken, celery, cranberries and pecans.  Whisk together mayonnaise, honey and seasonings.  Add to chicken mixture, stirring gently until combined.  Makes 4-6 servings.

Serve alone, on a bed of lettuce,  in a scooped-out tomato, or in individual pastry shells for a touch of elegance.  When it’s my daughter Laura’s turn to cook, this is one of her favorites!
