Berry Easy Cobbler

4 T Butter                               1 Cup Sugar, divided

1.5 C All purpose Flour        2 tsp. baking powder

1/2 tsp. salt                              1 Cup Milk

1.5 tsp. Vanilla                       Vanilla ice cream (optional)

2 (12 oz.) packages frozen raspberries

Place butter in 10-inch cast-iron skillet, and place in 350° oven for 10 minutes or until butter melts.

Toss raspberries in 3/4 Cup sugar in large bowl. Sift together 1.5 cups flour, baking powder, and salt in medium mixing bowl.  Stir in milk, vanilla, and remaining 1/4 Cup sugar.

Add hot melted butter to flour and stir until blended.  Pour batter evenly into skillet.  Pour berries into center of mixture — be sure to mound in center allowing space along perimeter for batter.

Bake at 350° for 50 minutes or til golden brown.  Let stand 10 minutes.  Serve with ice cream.

Hint:  Prep before dinner and bake while eating dinner.  I’ve prepared with blackberries too—So easy and good!
