Mama’s Minestrone

1 T Olive Oil                                                  1 10 oz. Bag Seasoning blend

1.5   tsp. minced garlic                                2 T flour

1.5 tsp. Cavender’s Greek Seasoning

1 15 oz can diced tomatoes in olive oil & basil

6 C chicken broth                                         1 16 oz bag carrots, sliced

2 15 oz cans Great Northern beans, rinsed & drained

2 C packed fresh baby spinach leaves

1 16 oz bag frozen sweet corn

In stockpot, heat olive oil and sauté seasoning

blend and garlic over medium heat until tender.  Sprinkle with flour and cook for about a minute. Stir in Greek seasoning, tomatoes and broth. Bring to boil.  Reduce heat to medium/low.  Add carrots and corn; cover and cook for 30 minutes or til carrots are tender.  Uncover, add beans and spinach.  Continue cooking until well heated.  Season with salt & pepper if needed. Serve with light salad or grilled cheese sandwich— a delightful winter dinner!  Serves 6-8.
