4-6 chicken breasts 1 15oz can black beans
1 C barbecue sauce* 1 8oz bottle ranch dressing
1 10oz pkg salad mix 1/2-3/4 C barbecue sauce
1 tomato, diced 1 8oz pkg shredded Cheddar
4-6 ribs chopped celery 3-4 chopped green onions
1 16oz can corn Crushed tortilla chips
Marinate chicken in barbecue sauce for 30 minutes. Remove and discard sauce. Grill (or bake) until cooked. Cut into slices. Combine salad greens, tomato, celery and green onions, tossing to mix. Drain black beans and corn. Rinse black beans thoroughly. Add beans and corn to salad mixture. Combine salad dressing and 1/2 C barbecue sauce. Add to salad & toss. Sprinkle with cheese and tortilla chips, topping with sliced chicken strips. Makes a great salad meal.
(*I use Jack Millers BBQ sauce cos it’s not so thick.)
