12 oz Strip Steak Kosher or Sea Salt
Canola Oil Fresh Ground Black Pepper
Preheat oven to 450.
Heat cast-iron skillet over high heat 8-12 minutes.
Season room-temperature steak with 1/4 teaspoon of salt and pepper on each side. Coat skillet with oil. Add steak.
Sear for 2 minutes. Turn and sear other side for 2 minutes. Put skillet and steak in oven and cook for 2 minutes. (Steak will be cooked to medium rare) Remove from oven (and don’t forget to use a potholder).
Let steak rest 3-4 minutes. Serve on a warm plate.
